TARTARIC ACID
Tartaric Acid is one of the main organic acids naturally found in grapes and, quantitatively, the most important acid present in grape musts and wines. It is a relatively strong acid that typically contributes to a wine pH ranging between 3.0 and 3.5.
In wine, tartaric acid is found primarily in the form of its salts. Organic acids play a fundamental role in the composition of wine, contributing significantly to its microbiological and physicochemical stability, as well as to its sensory characteristics.
Tartaric acid is added in the form of transparent white crystals to adjust or correct acidity levels. In winemaking, it is widely used as an acidifying agent and stabilizer, helping maintain balance, freshness and overall wine quality.
