POTASSIUM METABISULFITE releases sulfur dioxide (SO₂) into the wine, where it performs several important functions:
- Antiseptic action, inhibiting the activity of various microorganisms.
- Antioxidant action, as it reacts with dissolved oxygen in musts and wines in the presence of catalysts.
- Antioxidase action, as it immediately inhibits the activity of oxidative enzymes (tyrosinases and laccases), thereby protecting musts from oxidation.
- It combines with ethanal (acetaldehyde) and other similar compounds, helping to preserve the wine’s aroma and freshness.
RECOMMENDED DOSAGE
Use in accordance with the provisions of EC Regulation 1493/99 and EC Regulation 1622/00.
Warning: 1 g of potassium metabisulfite releases approximately 0.5 g of SO₂.
