EXTRATAN FRENCH OAK is a liquid preparation based on French oak tannins, concentrated and stabilized with gum arabic (E414, Acacia Senegal). It is recommended for all types of wines, beginning from the earliest stages of aging, to enhance structure and develop elegant oak-derived aromatic notes.
The use of this product provides the principal polyphenolic compounds associated with oak aging, with softer and less aggressive sensory characteristics similar to those obtained through maturation in oak barrels.
When used in older oak barrels that are no longer capable of releasing significant quantities of tannins, ExtraTan French Oak helps restore structure and promotes a wine evolution comparable to that achieved in newer French oak barrels.
It also has a strong ability to eliminate reductive off-odors, thanks to the presence of one or more carbonyl groups that act as electron acceptors toward sulfur-containing thiol compounds.
